Vegan Apple Salad Jar
Featuring a punchy cashew, basil and lemon dressing, with grated carrot, apples and chickpeas - this vegan salad ticks all the boxes.
For the dressing:130g cashews, soaked overnight and drained
handful fresh basil
4 tarragon sprigs
½ garlic clove
juice 1 lemon
8-10 tbsp water
salt and pepper
For the salad:1 tin chickpeas, drained
1 apple, cut into matchsticks
1 carrot, grated
handful of lettuce leaves
- Add all the dressing ingredients to a blender and blitz until smooth. Add a little more water if needed to achieve a creamy consistency. Season to taste.
- Mix the chickpeas with the apple matchsticks, adding a squeeze of lemon to stop the apple from going brown.
- Spoon the dressing into two jars and add the chickpeas and apple matchsticks, followed by the grated carrot. Top with the lettuce leaves to serve.
