Red Cabbage and Apple Slaw

Ingredients:500g red cabbage, cored
4 carrots, peeled
2 red apples, quartered and cored
50g pecan nuts, halved
2 x 200g bags crispy salad leaves
8 tbsp natural low-fat yoghurt
zest and juice of 2 lemons
1 tsp caster sugar
- Finely shred the cabbage and place in a large bowl. Coarsely grate the carrots and apples, add to the cabbage, pour on 2 tbsp of the lemon juice and toss to mix. Add the pecan nuts and salad leaves. Toss together.
- Whisk the natural low-fat yoghurt, remaining lemon juice and caster sugar together and season to taste. Just before serving, drizzle the dressing over the salad and serve.
