Toasted Garlic Hummus with Radishes

Crunchy radish dipped in creamy homemade hummus is a deliciously healthy lunchtime snack, and a perfect accompaniment for evening drinks. This vegan offering is super quick and easy to make, too!
Ingredients:6 cloves garlic, sliced
4 tbsp extra virgin olive oil
400g tinned chickpeas, drained
1 lemon, zest and juice of
1 tbsp tahini
salt and pepper To serve:
400g mixed radishes, cut in half
4 warmed pitta breads
- Place the garlic and olive oil into a medium sized frying pan. Heat gently until the garlic starts to turn a golden-brown, then remove from the heat and set aside.
- Place all of the hummus ingredients into a food processor, blend until smooth and season with salt and pepper.
- Serve with radishes, warmed pittas and olives.
