Tangy Cheddar and Salsa Wraps Recipe: Veggie

Ingredients:

4 large soft flour tortillas or wraps
1 romaine lettuce, shredded
1 avocado, peeled, pitted and chopped
2 tomatoes, chopped
1 small red onion, finely chopped
1/2 cucumber, finely chopped
1 tbsp chopped fresh coriander, parsley or mint
2 tsp lime or lemon juice
100g Pilgrims Choice Mature
Everyday Cheddar cheese, grated

method:

  • Lay the tortillas or wraps on a work surface. Share the shredded lettuce between them
  • Mix together the avocado, tomatoes, onion, cucumber and fresh herbs. Sprinkle with lime or lemon juice and season with some salt and freshly ground pepper. Share this mixture between the wraps, then top with the grated cheese.
  • Fold in the opposite sides of each wrap slightly to enclose the filling, then roll up tightly. Slice in half, then serve.
