Ruby Fruit Refresher

Ruby Fruit Refresher Recipe: Veggie

Ingredients:

225gstrawberries
175g raspberries
225g blueberies
grated rind and juice of 1 lime
4 tsp runny honey
250g natural yoghurt
3 tbsp finely chopped mint, plus a little extra to garnish

method:

  • Slice or quarter the strawberries depending on their size, then place in a serving bowl with the raspberries and blueberies.
  • Add the lime juice and grated rind, spoon over 2 tsp runny honey and mix together.
  • Place the natural yoghurt in a smaller bowl and stir in the final 2 tsp runny honey and 3 tbsp finely chopped mint.
  • Sprinkle the berry mixture with a few tiny mint leaves and serve topped with the minted yoghurt.
