RICE SALAD WITH PEAS, ROCKET, TOMATOES AND CAPERS
Ingredients:250g basmati rice 250 g packet of fresh peas (podded) 2 tbsp Sacla’ Free From Basil Pesto 1/2 lemon, juiced Small packet of wild rocket, washed and drained 2 tbsp of capers Handful of Basil leaves Sea salt and black pepper, to season
- Cook the rice according to pack instructions.
- Meanwhile, blanch the peas in boiling water for 2 minutes and mix the pesto and lemon juice together in a small bowl or jug.
- When the rice is ready, tip into a bowl and add the peas, rocket and capers.
- Drizzle the Pesto dressing over the rice salad, top with a handful of basil leaves and season to taste.
