Open Sandwich

Serves: 2

Open Sandwich Recipe: Veggie Magazine

Ingredients:

2 slices wholemeal bread
1 tbsp low-fat soft cheese
mixed lettuce leaves
1 red apple, cored and sliced
1 celery stick, thinly sliced
25g ready-to-eat dried apricots, chopped
15g raisins or sultanas
40g Pilgrims Choice Extra Mature
Cheddar, cubed
4 tbsp low-fat plain yoghurt
1 tsp finely grated lemon zest

method:

  • Spread the slices of wholemeal bread with the low-fat soft cheese. Place onto plates and top with some lettuce leaves.
  • Mix together the apple, celery, apricots and raisins or sultanas. Share between the two slices of bread. Scatter an equal amount of cheese over each open sandwich. Mix the yoghurt and lemon zest together and drizzle on top, then season with a little black pepper and serve.
