NECTARINE, FETA AND LENTIL SALAD Recipe: Veggie Magazine

Ingredients:

4 tsp wholegrain mustard with honey
finely grated zest and juice of 1 lemon
1 tbsp extra virgin olive oil
2 x 300g pouches Waitrose wheatberries, lentils & green vegetables
185g courgette spaghetti
2 ripe nectarines, stoned and sliced
½ x 200g pack Greek light salad cheese, thinly sliced

method:

  • In a large bowl, whisk together the mustard, lemon zest, juice and oil, then season.
  • Cook the wheatberry pouches according to their instructions. Toss well with the dressing and raw courgette. Set aside for five minutes. Fold the nectarine and cheese through the salad, then serve.
