Mushroom and Brie Crêpes

As you tuck into these delicious pancakes, the memories of French holidays will come flooding back!

Mushroom and Brie Crêpes Recipe: Veggie Magazine

Ingredients:

25g butter
1 tbsp olive oil
150g chestnut mushrooms, sliced
100g button mushrooms, halved
125g pack oyster mushrooms
2 cloves garlic, chopped
3 sprigs fresh thyme
2 tbsp crème fraîche
200g vegetarian Brie
4 pack of crêpes
salt and pepper

method:

  • Melt the butter and olive oil in a large frying pan. Add the sliced chestnut mushrooms and button mushrooms and fry over a high heat until nicely browned.
  • Add the garlic cloves, oyster mushrooms and the leaves from the thyme and cook for two minutes. Add two tbsp crème fraîche and seasoning and heat until just melted.
  • Dice the Brie, add to the mushrooms and then spoon into the warmed crêpes. Garnish with extra thyme and serve with a watercress salad.
