GALA APPLE VEGAN SALAD JAR
Ingredients:1 tin chickpeas, drained
1 Gala apple, cut into matchsticks
1 large carrot, grated or spiralised
a few Cos lettuce leaves FOR THE DRESSING:
130g cashews, soaked overnight and drained
medium-sized bunch basil
4 large sprigs tarragon
½ garlic clove
juice 1 lemon, plus a little extra if needed
8-10 tbsp water, to loosen
salt and pepper
- Add all dressing ingredients to a blender with eight tablespoons of water and blend until smooth. Add a little more water if needed to achieve a creamy consistency. Adjust seasoning to taste.
- Mix the chickpeas with the apple matchsticks, adding a squeeze of lemon to stop the apple from going brown.
- Spoon the dressing into two jars, top with the chickpeas and apple matchsticks, followed by the carrot. Finish by sliding the lettuce leaves down the side of the jars.
