Fresh Gnocchi Bolognese with Almond Cheese

Fresh Gnocchi Bolognese with Almond Cheese Recipe: Veggie Magazine

Ingredients:

fresh gluten-free gnocchi
1 fresh green onion, finely chopped, use the white part only
1 packed of vegan mozzarella
cherry tomatoes
250ml tomato purée
Arugula
1/4 tsp of turmeric powder
1/2 tsp of wild garlic powder
1/2 tsp of dried oregano
1/2 tsp of dried basil
pinch of salt
black sesame seeds

method:

  • Start by making the creamy tomato sauce. In a large saucepan heat up the tomato purée. Once it starts boiling, add all the spices, the salt and the finely chopped green onion. Cook for at least 8 minutes in low heat. Now it’s time to add half the packet of the mozzarella cheese. Blend in the cheese with the sauce until it forms a creamy and uniform texture. Turn off the heat and cover.
  • Now quickly boil the gnocchi with a pinch of salt. Follow the instructions on the packaging of your gnocchi. However, bear in mind that it shouldn’t take more than a couple of minutes to be fully boiled if you get the fresh ones.
  • It’s time to serve! On your favourite bowl or plate, add the creamy tomato sauce first. Next, add the gnocchi and the arugula. Finally, top with some extra mozzarella cheese, some black sesame seeds and the cherry tomatoes.
