Cheesy Croute Salad

This makes a great starter for a posh dinner party

Cheesy Croute Salad Recipe: Veggie Magazine

Ingredients:

Half a baguette sliced into croutes
2 tbsp olive oil
200g vegetarian French hard cheese
bag of salad leaves
baby plum tomatoes
2 tbsp pine nuts
vinaigrette

method:

  • Preheat the oven to 200C/400F/Gas 6. Brush both sides of the sliced bread with olive oil and bake for eight minutes until golden.
  • Remove and top each bread croute with a little sun dried tomato paste and three to four slices of cheese. Bake the croutes for a further five minutes until the cheese has melted.
  • In a large salad bowl, toss together the salad leaves, baby plum tomatoes, pine nuts and salad dressing. Divide between four plates and top with the warm croutes. Serve immediately.
