Cheat’s Stuffed Mushrooms

Cheat’s Stuffed Mushrooms Recipe: Veggie

Ingredients:

100g long grain rice
4 portobello mushrooms, wiped
4 salad onions, thinly sliced
1 garlic clove, crushed
150g pot Dolmio Sun-dried Tomato Stir-in
4 tbsp finely grated vegetarian Parmesan-style cheese
salad leaves to serve

method:

  • Preheat the oven to 190C/375F/Gas 5. Cook the rice. Remove the stalks from the mushrooms and finely chop. Place the caps gills up in a baking dish.
  • Heat 1 tbsp oil and cook the salad onions, stalks and garlic over a medium heat for a few minutes, until softened.
  • Drain the rice, add the onion mixture, and mix in the Stir-in. Spoon the mixture into the mushrooms and season with pepper. Sprinkle with the cheese and bake for 20-25 minutes.
